Honey-Dijon Glazed Chicken Breast with Garlic-Spinach Roasted Potatoes

I made this for dinner yesterday and it was really, really good, very juicy (chicken, especially breast, tends to be quite dry). I’m always on the lookout for different ways to season my meat and veggies and this was great.
p.s. I only switched olive oil for butter since, well, it’s more stable to cook with :)
